Preparation
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly and slice them in half lengthwise. Drizzle with olive oil and sprinkle with salt. Place cut-side down on a baking sheet lined with parchment paper and roast for 35-45 minutes until fork-tender.
- Heat a skillet over medium heat. Add olive oil, then toss in diced onions and bell peppers. Sauté for 5-7 minutes until tender.
- Add your protein choice to the skillet with onions and peppers. Stir in minced garlic, cumin, chili powder, salt, and pepper. Cook for 7-10 minutes until the protein is fully cooked.
- Stir in fresh spinach and allow to wilt for 2 minutes. Remove from heat.
- Remove sweet potatoes from the oven and let cool. Scoop out some flesh from each half, mixing it into the skillet with the protein mixture.
- Fill each sweet potato half with the protein and vegetable mixture. Sprinkle cheese on top if desired. Return to oven for 10 minutes to melt cheese.
- Garnish with cilantro, green onions, or feta cheese. Serve warm.
