Ingredients
  

For the Sweet Potatoes
  • 4 medium Sweet Potatoes can substitute with butternut squash
For the Filling

  • 1 cup Bell Peppers zucchini or carrots can be used

  • 3 cloves Garlic fresh minced garlic boosts flavor
  • 1 teaspoon Cumin adjust based on your spice tolerance
  • 1 teaspoon Chili Powder adjust based on your spice tolerance

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and slice them in half lengthwise. Drizzle with olive oil and sprinkle with salt. Place cut-side down on a baking sheet lined with parchment paper and roast for 35-45 minutes until fork-tender.
  3. Heat a skillet over medium heat. Add olive oil, then toss in diced onions and bell peppers. Sauté for 5-7 minutes until tender.
  4. Add your protein choice to the skillet with onions and peppers. Stir in minced garlic, cumin, chili powder, salt, and pepper. Cook for 7-10 minutes until the protein is fully cooked.
  5. Stir in fresh spinach and allow to wilt for 2 minutes. Remove from heat.
  6. Remove sweet potatoes from the oven and let cool. Scoop out some flesh from each half, mixing it into the skillet with the protein mixture.
  7. Fill each sweet potato half with the protein and vegetable mixture. Sprinkle cheese on top if desired. Return to oven for 10 minutes to melt cheese.
  8. Garnish with cilantro, green onions, or feta cheese. Serve warm.
