  • 2 medium Diced Carrots frozen or canned can be used
  • 2 medium Diced Potatoes sweet potatoes make a great twist
  • 1 cup Frozen Peas can swap with fresh peas if in season
For Flavoring
  • 3 tablespoons Tomato Paste or use crushed tomatoes
  • 1 tablespoon Worcestershire Sauce or soy sauce for vegetarian option
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • to taste Salt and Pepper
For Creaminess
  • 1 cup Milk can swap for non-dairy milk
  • 2 tablespoons Cornstarch (optional) can be omitted for thinner consistency

Step-by-Step Instructions
  1. Heat the olive oil in a large pot over medium heat for 1-2 minutes until it shimmers.
  2. Add the diced onion and minced garlic, sauté for 3-4 minutes until softened and translucent.
  3. Add the ground beef or turkey and cook for 5-7 minutes, breaking it apart until browned.
  4. Stir in the diced carrots and potatoes, cooking for an additional 5 minutes.
  5. Pour in the broth, add tomato paste and Worcestershire sauce, season with thyme, rosemary, salt, and pepper. Bring to a boil then simmer for 20-25 minutes.
  6. After simmering, add the frozen peas and milk, stir well and mix in cornstarch if desired. Cook for 5 minutes.
  7. Taste and adjust seasoning as needed before serving.
  8. Ladle into bowls and serve hot, optionally topping with shredded cheese or fresh herbs.
