- Dice the chicken breasts into bite-sized pieces and place in a bowl. Drizzle with olive oil, seasoning with salt and black pepper. Toss to coat.
- Heat a large skillet over medium heat. Cook the chicken in batches for 5-7 minutes until golden brown. Remove and set aside.
- In the same skillet, add the diced onion and cook for 2-3 minutes until translucent. Scrape up any bits stuck to the pan.
- Stir in diced tomatoes, tomato paste, pumpkin puree, coconut milk, and lemon juice. Heat for 3-5 minutes until simmering.
- Add brown sugar and spices. Stir well and return cooked chicken to the skillet. Cover and simmer for 10-15 minutes.
