For the Curry
  • 1 lbs Chicken Breasts boneless, skinless
  • 2 tbsp Extra Virgin Olive Oil or avocado oil
  • 1 medium Yellow Onion
  • 14.5 oz Diced Tomatoes with juices
  • 2 tbsp Tomato Paste freeze leftovers for future recipes
  • 15 oz Pumpkin Puree or butternut squash
  • 13.5 oz Coconut Milk canned preferred
  • 2 tbsp Lemon Juice fresh preferred
  • 1 tbsp Brown Sugar light or dark
  • 2 tbsp Curry Powder adjust to taste
  • 2 tsp Mild Chili Powder adjust to taste
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 0.5 tsp Ground Cumin
  • 0.5 tsp Ground Mustard Seed
  • 0.5 tsp Ground Coriander Seed
  • 0.5 tsp Ground Cinnamon
For Serving
  • Optional Grain/Legume e.g. rice, quinoa
  • Optional Toppings cilantro, red pepper flakes, coconut milk

Method
 

Step-by-Step Instructions
  1. Dice the chicken breasts into bite-sized pieces and place in a bowl. Drizzle with olive oil, seasoning with salt and black pepper. Toss to coat.
  2. Heat a large skillet over medium heat. Cook the chicken in batches for 5-7 minutes until golden brown. Remove and set aside.
  3. In the same skillet, add the diced onion and cook for 2-3 minutes until translucent. Scrape up any bits stuck to the pan.
  4. Stir in diced tomatoes, tomato paste, pumpkin puree, coconut milk, and lemon juice. Heat for 3-5 minutes until simmering.
  5. Add brown sugar and spices. Stir well and return cooked chicken to the skillet. Cover and simmer for 10-15 minutes.
  6. Prepare your optional grain or legume. Spoon curry over grain and garnish with cilantro or coconut milk.
