Mixing and Forming
- In a large mixing bowl, combine the creamy peanut butter, pumpkin puree, rolled oats, and maple syrup. Stir thoroughly for about 2-3 minutes until sticky.
- Fold in the ground flax seed and chia seeds, and incorporate pumpkin spice for flavor. Mix for another 2 minutes until even.
- If using, gently mix in mini chocolate chips or raisins until evenly distributed.
- Roll the mixture into small balls about 1 inch in diameter and place them on a parchment-lined tray.
- Refrigerate the tray for at least 1 hour to firm up the bites.
- Once firm, transfer to an airtight container. They can be stored in the refrigerator for up to a week.
