  • 1/4 cup Red Onion Diced and soaked in cold water
  • 1/4 cup Fresh Parsley Can substitute with cilantro or dill
For the Dressing
  • 1 medium Lemon Juice Freshly squeezed
  • 2 tablespoons Olive Oil Adjust based on preference

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine 1 cup of cottage cheese with 1 can of rinsed and drained chickpeas. Gently fold until creamy and well-blended.
  2. Add 1 diced cucumber, 1 cup of halved cherry tomatoes, and 1/4 cup of diced red onion. Stir gently to mix.
  3. Toss the salad until all ingredients are mixed thoroughly.
  4. Drizzle with the juice of 1 lemon and 2 tablespoons of olive oil. Season with salt and pepper to taste.
  5. Toss again and refrigerate for 15-20 minutes before serving.
  6. Give a final toss before enjoying the salad on its own, in pita pockets, or with grilled dishes.
