- In a large mixing bowl, combine 1 cup of cottage cheese with 1 can of rinsed and drained chickpeas. Gently fold until creamy and well-blended.
- Add 1 diced cucumber, 1 cup of halved cherry tomatoes, and 1/4 cup of diced red onion. Stir gently to mix.
- Toss the salad until all ingredients are mixed thoroughly.
- Drizzle with the juice of 1 lemon and 2 tablespoons of olive oil. Season with salt and pepper to taste.
- Toss again and refrigerate for 15-20 minutes before serving.
- Give a final toss before enjoying the salad on its own, in pita pockets, or with grilled dishes.
