- Prepare the Crust by lining an 8x8-inch baking pan with parchment paper. Melt unsalted butter in a microwave-safe bowl, combine with Nilla Wafer cookie crumbs, and press into the prepared pan. Freeze for at least 30 minutes to set.
- Make the Gelatin by dissolving orange gelatin in one cup of boiling water, then adding one cup of cold water. Allow mixture to cool at room temperature for 15-20 minutes.
- Prepare the Orange Cream Layer by beating cream cheese, powdered sugar, orange extract, and optional food coloring until smooth. Gradually mix in the cooled gelatin and refrigerate for at least one hour to firm up.
- Prepare the Cheesecake Layer by beating cream cheese, powdered sugar, and vanilla extract until smooth. Fold in Cool Whip until just combined.
- Layer the Bars by spreading the cheesecake mixture over the crust, followed by the chilled orange cream layer. Smooth the surface with a spatula.
- Chill the bars covered in plastic wrap or foil for a minimum of 6 hours, preferably overnight, to set properly.
