  • 1 cup Creamed Corn can substitute with more whole kernel corn
  • 1 box Corn Muffin Mix gluten-free mix if necessary
  • 1 cup Sour Cream Greek yogurt can be used
  • 1/2 cup Butter melted; can substitute with coconut oil
  • 4 large Large Eggs can use flax eggs for vegan option
  • 1/4 cup Sugar adjust to taste
  • 1 teaspoon Salt adjust according to taste
Optional Add-Ins
  • 1/2 cup Diced Jalapeños for a spicy twist
  • 1/2 cup Cream Cheese for extra richness
  • 1 cup Shredded Cheese for a cheesy crust

Method
 

Preparation
  1. Preheat the Oven to 350°F (175°C).
  2. Grease a 9x13-inch baking dish with butter.
  3. Mix together the whole kernel corn and creamed corn in a large bowl.
  4. Stir in the corn muffin mix until just combined.
  5. Whisk the eggs in a separate bowl; then mix in the sour cream and melted butter.
  6. Fold the egg mixture into the corn mixture; add sugar and salt.
  7. Pour the mixture into the prepared baking dish.
  8. Bake in the preheated oven for 45-50 minutes until golden brown.
  9. Let cool for about 10 minutes before serving.
