Ingredients
  

For the Chicken
  • 2 pieces Boneless, skinless chicken breasts cut into small pieces
  • 2 tablespoons Olive oil or canola/vegetable oil
  • 1 teaspoon Smoked paprika sub regular paprika if needed
  • 1 teaspoon Garlic powder adjust if fresh garlic is used
  • 1 teaspoon Onion powder omit for milder taste
  • to taste Salt
  • to taste Pepper omit for mild flavor
For the Sweet & Spicy Sauce
  • 1/4 cup Honey or maple syrup as alternative
  • 2 tablespoons Hot sauce adjust for desired heat
For the Creamy Jalapeño Sauce
  • 3/4 cup Sour cream or Greek yogurt as alternative
  • 2 pieces Fresh jalapeños chopped
  • 1 tablespoon Lime juice or lemon juice in a pinch
For Assembling the Quesadillas
  • 4 pieces Flour tortillas or corn tortillas for gluten-free
  • 1 cup Shredded cheddar cheese or substitute with Monterey Jack
  • 1 cup Shredded Monterey Jack cheese or substitute as desired
  • 1 tablespoon Butter or olive oil for grilling
  • to taste Fresh cilantro optional garnish

Method
 

Cooking Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the cut chicken seasoned with smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for about 8–10 minutes until golden brown and cooked through.
  2. In a small bowl, combine 1/4 cup of honey and 2 tablespoons of hot sauce. Once the chicken is cooked, pour this mixture over the chicken, toss to coat, and warm for 2 minutes on low heat.
  3. In a mixing bowl, combine 3/4 cup of sour cream, 2 chopped jalapeños, lime juice, garlic powder, and salt. Stir until mixed and refrigerate.
  4. Lay one flour tortilla on a surface. Sprinkle cheddar cheese on one half, add glazed chicken, top with more cheese, then fold.
  5. Melt 1 tablespoon of butter in the skillet. Cook the quesadillas for 2–3 minutes on each side until golden brown and cheese is melted.
  6. Remove from skillet, cool slightly, slice into wedges, and serve with the creamy jalapeño sauce drizzled or on the side.
