  • ½ cup Heavy Cream Can substitute with half-and-half.
  • ½ cup Parmesan Cheese Freshly grated.
For Garnish
  • 2 tablespoons Fresh Parsley Chopped.

Method
 

Preparation
  1. Slice the boneless, skinless chicken breasts into bite-sized strips and season with salt, black pepper, and crushed red pepper flakes.
  2. In a skillet, heat olive oil and 1 tablespoon of butter; add chicken and sear for 5-7 minutes until golden brown.
  3. Remove the chicken from skillet and set aside.
  4. Lower heat and add remaining butter; sauté garlic for about 1 minute until fragrant.
  5. Deglaze the pan with lemon juice and chicken broth, letting it simmer for 3-5 minutes.
  6. Rinse rice; bring chicken broth to a boil in a pot, add rice, then cover and simmer for 15-20 minutes.
  7. Stir in heavy cream and Parmesan cheese into the cooked rice; season with salt and pepper.
  8. Return chicken to the skillet with the garlic sauce and heat for 2 minutes.
  9. Serve the garlic Parmesan rice topped with Chicken Scampi and garnish with parsley.
