- Prepare the sauce by mixing 2 tablespoons of cornstarch with 1 cup of water until smooth. In a saucepan, combine the soy sauce, brown sugar, minced garlic, minced ginger, rice vinegar, honey, and sesame oil. Stir in the cornstarch mixture and simmer for 5-7 minutes until thickened.
- Cut chicken into 1-inch cubes. Marinate in half of the cooled teriyaki sauce in a ziplock bag for at least 30 minutes.
- Preheat the grill to medium heat (350°F to 400°F). Soak wooden skewers for at least 30 minutes.
- Assemble the skewers with 4-5 pieces of marinated chicken each.
- Grill the skewers for 20-30 minutes, turning every 3-4 minutes and basting with reserved sauce.
- Serve with topping of sesame seeds and chopped green onions.
