- Preheat your oven to 375°F (190°C).
- Grate the zucchini and set it aside.
- Sauté chopped onions and minced garlic in a skillet with olive oil or butter for 5-7 minutes until soft.
- Toast the uncooked rice in the skillet for 2-3 minutes.
- Combine sautéed mixture, grated zucchini, toasted rice, milk, and half of the Parmesan cheese in a mixing bowl.
- Pour the mixture into a greased baking dish, cover with foil, and bake for 30 minutes.
- Remove foil, add butter and remaining Parmesan on top, bake uncovered for an additional 15 minutes.
- Allow to cool for a few minutes before serving.
