  1. Remove the New York strip steak from the refrigerator and let it reach room temperature for about 30 minutes. Season both sides with salt and pepper.
  2. Heat a heavy skillet over medium-high heat for 2 minutes. Add oil and sear the steak for 2-3 minutes on each side. Let it rest for 5-10 minutes before slicing.
