Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, combine the cottage cheese and eggs, blending until smooth and creamy.
  3. Transfer the mixture into a bowl, and fold in your chosen mix-ins.
  4. Grease your mini muffin pan with cooking spray or olive oil.
  5. Spoon the mixture into each cavity of the mini muffin pan, filling them about ¾ full.
  6. Place a baking sheet filled with water on the oven rack below the muffin pan.
  7. Bake for about 20 minutes, until set and lightly golden.
  8. Remove from oven and cool for about five minutes before removing from the pan.
  9. Serve warm or cool completely before storing.
