- Preheat your oven to 350°F (175°C).
- In a food processor, combine the cottage cheese and eggs, blending until smooth and creamy.
- Transfer the mixture into a bowl, and fold in your chosen mix-ins.
- Grease your mini muffin pan with cooking spray or olive oil.
- Spoon the mixture into each cavity of the mini muffin pan, filling them about ¾ full.
- Place a baking sheet filled with water on the oven rack below the muffin pan.
- Bake for about 20 minutes, until set and lightly golden.
- Remove from oven and cool for about five minutes before removing from the pan.
- Serve warm or cool completely before storing.
