  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano dried works beautifully
  • to taste Salt
  • to taste Pepper
For the Garnish
  • 1/4 cup Fresh Cilantro chopped
  • 2 Lime Wedges for serving

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and gather your ingredients.
  2. In a large pot, add olive oil and sauté chopped onion for about 5 minutes until translucent, then add minced garlic for another minute.
  3. Incorporate the smoked sausage, cooking for 5-7 minutes until browned.
  4. Sprinkle in cumin, oregano, salt, and pepper. Stir well for 1-2 minutes.
  5. Add the black beans (drained and rinsed) and rice to the pot, then pour in 4 cups of water or broth.
  6. Bring the mixture to a boil, reduce to a low simmer, cover, and let it simmer for 20-25 minutes.
  7. Remove from heat and let sit for 5 minutes. Fluff the dish with a fork and garnish with cilantro and lime.
  8. Serve and enjoy!
