Method
 

Step-by-Step Instructions
  1. Cut the chicken breasts into bite-sized pieces and season with salt and pepper, then sear in a skillet with olive oil for 5-7 minutes until golden brown.
  2. In the same skillet, add butter and garlic, sautéing for 1-2 minutes until fragrant.
  3. Stir in lemon juice and parsley, return the chicken to the skillet, and simmer for another 2-3 minutes.
  4. In another saucepan, melt butter and toast garlic with the rice for 2-3 minutes until slightly golden.
  5. Pour in chicken broth, bring to a boil, then reduce heat and simmer for about 15 minutes until rice is tender.
  6. Stir in heavy cream and parmesan cheese, mixing until creamy and adjust seasoning.
  7. Serve the creamy rice topped with chicken scampi and garnish with parsley.
