Preparation Steps
  1. In a small mixing bowl, whisk together olive oil, minced garlic, ground coriander, ground cumin, paprika, salt, turmeric, cinnamon, black pepper, and lemon juice.
  2. In a large bowl, marinate chicken thighs and sliced onion with the prepared mixture, cover, and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat, and grill chicken thighs for about 6-7 minutes per side, until golden brown and internal temperature reaches 165°F.
  4. Prepare fresh toppings by slicing mini cucumber, tomatoes, and red onion, and chopping romaine lettuce.
  5. Slice the grilled chicken into thin strips, warm the pita bread, fill each with chicken and fresh vegetables, and drizzle with tzatziki sauce.
