For the Stir Fry
  • 1 pound Chicken breasts Boneless and skinless
  • 2 tablespoons Extra virgin olive oil Can substitute with regular olive oil if needed

  • 1 medium Zucchini Slice into half-moons
  • 1 medium Red bell pepper Dice into chunks
  • 1 medium Red onion Slice into strips
  • 1 cup Cherry tomatoes Can swap with sun-dried tomatoes
  • 1/2 cup Kalamata olives Pitted and halved
  • 3 cloves Garlic Minced
  • 1/2 cup Sun-dried tomatoes Chopped
  • 1 teaspoon Dried oregano Toast briefly for aroma
  • 1 teaspoon Dried basil Toast briefly for aroma
  • 1 teaspoon Dried thyme Toast briefly for aroma
  • 1 tablespoon Lemon (juice only) Add at the end for freshness
  • 1/2 cup Feta cheese Can omit for dairy-free version
  • 1/4 cup Fresh parsley Optional garnish

Method
 

Step-by-Step Instructions
  1. Gather all ingredients. Chop chicken into bite-sized pieces. Slice zucchini, dice red bell pepper and onion, mince garlic, and chop sun-dried tomatoes.
  2. Heat skillet over medium-high heat, add olive oil. Sear chicken for 6-8 minutes until golden brown, remove and keep warm.
  3. In the same skillet, add more olive oil if needed, sauté onion and garlic for 2-3 minutes until translucent.
  4. Add zucchini and red bell pepper, cook for 5-6 minutes until tender but crisp.
  5. Return chicken to skillet. Stir in cherry tomatoes, olives, and sun-dried tomatoes. Add oregano, basil, and thyme, cooking together for 2 minutes.
  6. Drizzle lemon juice over stir fry, stir, and cook for an additional minute. Serve garnished with parsley if desired.
