Step-by-Step Instructions
  1. In a large pot, heat over medium-high heat and add the ground pork. Cook for 5-7 minutes, breaking it apart until browned. Season with salt and pepper, and drain excess fat if needed.
  2. Stir in the diced yellow onion, minced garlic, and grated ginger into the pot with the browned pork. Sauté for 3-4 minutes until the onion turns translucent.
  3. Add soy sauce, sesame oil, and rice vinegar to the pot; mix well. Pour in the chicken broth and bring to a gentle boil.
  4. Once boiling, add shredded carrots and green cabbage. Reduce heat and simmer for 15 minutes; stir in half of the chopped green onions.
  5. If desired, drizzle in beaten eggs while stirring gently for silky ribbons.
  6. Taste and adjust seasoning with salt and pepper. Ladle into bowls and top with remaining green onions. Optionally drizzle with hot sauce or sprinkle with red pepper flakes.
