  3. Roast the Potatoes: Cut potatoes into wedges, toss with olive oil, salt, and spices. Roast in the oven for 40-60 minutes until crispy.
  4. Prepare Tzatziki Sauce: Combine Greek yogurt, grated cucumber, minced garlic, lemon juice, dill or mint, and salt. Chill to allow flavors to meld.
  5. Assemble the Bowl: Layer fresh lettuce, roasted potatoes, meatballs, salad components, and tzatziki sauce in each bowl.
