- Preheat your oven to 375°F (190°C) and prepare your 9x13-inch baking dish with non-stick cooking spray.
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing for about 3-4 minutes until the onion is translucent.
- Add the ground turkey to the skillet, breaking it apart. Season with Italian seasoning, salt, and pepper. Cook for 5-7 minutes until browned.
- Stir in sliced zucchini and drained diced tomatoes. Cook for another 5 minutes until zucchini softens slightly.
- Remove from heat and stir in half of the shredded cheese until melted.
- Spoon the mixture into the prepared baking dish, spreading evenly.
- Sprinkle remaining shredded cheese and grated Parmesan cheese on top. Add breadcrumbs if desired.
- Bake for 20-25 minutes until cheese is melted and bubbly, with a golden-brown color on top.
