  • 1 cup Protein Pancake Mix Any protein pancake mix or regular mix plus added protein powder
  • 1 cup Water Adjust based on consistency as needed
  • 2 tablespoons Sugar-Free Maple Syrup Could use regular syrup or honey as an alternative
For Extra Flavor
  • 1 cup Shredded Cheddar Cheese Use sharp cheddar or substitute with pepper jack for spice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (175°C) and grease a 12-cup muffin tin.
  2. Combine protein pancake mix with water in a large mixing bowl until smooth.
  3. Fold in the cooked breakfast sausage gently into the batter.
  4. Carefully mix in the shredded cheddar cheese and sugar-free maple syrup.
  5. Fill each muffin cup about ¾ full with the batter.
  6. Bake for 18-23 minutes until golden brown and a toothpick comes out clean.
  7. Let cool for about 5 minutes, then gently remove from the muffin cups.
  8. Serve warm with additional syrup, and store leftovers in an airtight container.
