  • 1 teaspoon Garlic Powder or fresh minced garlic
For the Base
  • 2 cups Cooked Sushi Rice or short-grain/jasmine rice
For the Toppings
  • 1 medium Avocado cubed
  • 1/4 cup Spicy Mayo mix mayonnaise with sriracha
  • 2 tablespoons Furikake or crushed nori/sesame seeds
  • 1/3 cup Crispy Fried Onion Bits or substitute with panko breadcrumbs
  • 2 tablespoons Scallions diced or chives for milder flavor

Method
 

Step-by-Step Instructions
  1. Remove the skin from the salmon fillet and cut it into 1-inch cubes. Mix the salmon pieces with teriyaki sauce and kosher salt, marinating for about 10 minutes.
  2. Press the cooked sushi rice firmly into a small baking dish to create a flat base. Evenly distribute the marinated salmon over it and sprinkle with garlic powder and brown sugar.
  3. Preheat the broiler to high. Place the baking dish under the broiler and cook for about 6 minutes until the salmon is golden brown.
  4. Remove the dish and layer on cubed avocado, drizzle with spicy mayo, and finish with furikake, crispy onions, and scallions.
  5. Serve immediately while hot for the best experience.
