  • 2 cloves Garlic Minced garlic adds aromatic depth.
For the Tacos
  • 10 pieces Mini Tortillas Substitute with smaller flour or corn tortillas if desired.
For the Quick-Pickled Cucumbers
  • 1 medium Cucumber Fresh cucumbers add crunch; pickled carrots or radishes can be used.
  • 1/2 cup Rice Vinegar Apple cider vinegar is a good substitute.
  • 1 tablespoon Sugar Honey can be used as a natural alternative.
For the Dipping Sauce
  • 2 tablespoons Soy Sauce Mix with sesame oil for richer taste.
  • 1 tablespoon Vinegar Rice vinegar or apple cider vinegar work well.
  • 1 tablespoon Sesame Oil Opt for toasted sesame oil for extra depth.

Method
 

Preparation
  1. In a mixing bowl, combine the ground pork, soy sauce, ginger, and minced garlic. Mix thoroughly until well combined and set aside.
  2. Take mini tortillas and spoon the pork filling onto the center of each, pressing down slightly to compact.
  3. Heat vegetable oil in a skillet over medium heat. Fry the tacos for 2-3 minutes until golden brown, then flip and fry the other side.
  4. Prepare pickled cucumbers by mixing rice vinegar, sugar, and salt. Slice cucumbers and soak them in the mixture for about 5 minutes.
  5. Remove tacos from skillet, drain on paper towels, and top with pickled cucumbers and dipping sauce before serving.
