- In a mixing bowl, combine the ground pork, soy sauce, ginger, and minced garlic. Mix thoroughly until well combined and set aside.
- Take mini tortillas and spoon the pork filling onto the center of each, pressing down slightly to compact.
- Heat vegetable oil in a skillet over medium heat. Fry the tacos for 2-3 minutes until golden brown, then flip and fry the other side.
- Prepare pickled cucumbers by mixing rice vinegar, sugar, and salt. Slice cucumbers and soak them in the mixture for about 5 minutes.
- Remove tacos from skillet, drain on paper towels, and top with pickled cucumbers and dipping sauce before serving.
