Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3–5 minutes until translucent. Stir in the minced garlic and cook for an additional minute.
  3. Add the diced zucchini, chopped spinach, halved cherry tomatoes, and rinsed chickpeas. Season with salt, pepper, oregano, and paprika. Cook for 5–7 minutes until zucchini softens.
  4. Pour the mixture into a greased baking dish. If using, sprinkle breadcrumbs on top.
  5. Bake for 25–30 minutes until golden brown and bubbly.
  6. Remove from the oven and let cool for a few minutes before serving.
