Step-by-Step Instructions
  1. Marinate the Chicken: In a bowl, whisk together coconut milk, curry powder, brown sugar, fish sauce, soy sauce, turmeric, minced garlic, grated ginger, and lime juice. Add chicken, coat well, and refrigerate for at least 1 hour.
  2. Prepare the Peanut Sauce: In a saucepan over low heat, combine peanut butter, remaining coconut milk, red curry paste, brown sugar, soy sauce, rice vinegar, and juice of half a lime. Stir until smooth, simmer gently for 5 minutes.
  3. Preheat Your Grill: Set grill to medium-high heat for about 10 minutes.
  4. Skewer and Grill the Chicken: Thread marinated chicken onto skewers. Cook on grill for about 4–5 minutes on each side until charred and internal temperature reaches 165°F.
  5. Serve with Peanut Sauce: Place skewers on a platter and serve hot with peanut sauce for dipping.
