For the Meatloaf Mixture
  • 2 lbs Ground Beef or ground turkey/chicken for lighter option
  • ¾ cup Italian Style Breadcrumbs or crushed crackers/gluten-free breadcrumbs
  • 2 Eggs use flax egg as vegan substitute
  • ½ cup Parmesan Cheese omit for dairy-free option
  • Garlic fresh minced for best flavor
  • Red Onion or yellow onion if preferred
  • 1 tsp Salt adjust according to taste
  • ½ tsp Black Pepper adjust according to taste
  • 2 tbsp Fresh Parsley chopped, can use Italian seasoning as substitute
For the Filling
  • ¼ lb Deli Ham or turkey; optional for lighter option
  • 12-15 Fresh Basil Leaves dried basil can be used but won't replicate flavor
  • cups Mozzarella Cheese shredded, can substitute with fontina/provolone
For the Sauce and Serving
  • Marinara Sauce store-bought or homemade
  • Pasta or Zucchini Noodles zucchini noodles for low-carb option
  • Olive Oil choose extra virgin for best taste

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Sauté diced red onion and red bell pepper in olive oil for about 5 minutes. Add minced garlic and sauté for an additional minute. Set aside to cool.
  3. In a large bowl, combine the cooled vegetables, ground beef, breadcrumbs, Parmesan, eggs, salt, pepper, and parsley. Mix until well incorporated.
  4. Transfer the meat mixture onto parchment paper and shape into a rectangle approximately 8" x 15".
  5. Sprinkle deli ham, fresh basil, and shredded mozzarella over the meat rectangle, leaving a 1-inch border.
  6. Roll the meatloaf tightly into a log shape using parchment paper for assistance. Seal the ends.
  7. Carefully transfer the rolled meatloaf onto a baking sheet lined with parchment paper, seam side down.
  8. Bake for about 1 hour or until the internal temperature reaches 160°F (70°C).
  9. Remove from the oven, tent with foil, and let rest for 10 minutes before slicing.
  10. Serve slices over pasta or zucchini noodles with warm marinara sauce.
