Step-by-Step Instructions for Simple Mango Pudding
  1. Peel, pit, and dice two ripe mangoes. Blend in a blender until smooth for about 60 seconds. Strain for ultra-smooth texture if desired.
  2. In a medium bowl, sprinkle gelatin (or agar agar) over ¼ cup of cold water and let it thicken for about 30 to 45 seconds.
  3. Add mango puree, ⅓ cup sugar, and 1 cup coconut milk to bloomed gelatin. Whisk thoroughly until smooth.
  4. Pour the mixture into a pot, whisk over medium-low heat for about 4 to 5 minutes until gelatin dissolves completely. Do not boil.
  5. Pour into serving bowls or molds, tap to remove air bubbles, cover and refrigerate for at least 6 hours or overnight.
