Ingredients
  

For the Skillet
  • 2 tablespoons avocado oil Substitute with vegetable or olive oil if needed.
  • 4 cups Yukon Gold potatoes, diced No need to peel; substitutes include sweet or red potatoes.
  • 1 pound lean ground beef Aim for a 90/10 ratio to reduce grease.
  • 1 medium yellow onion, diced Can substitute with white or red onions.
  • 1 medium red bell pepper, chopped Green or yellow peppers can also be used.
  • 1-1.5 teaspoons kosher salt Season to taste.
  • 1/2 teaspoon black pepper Season to taste.
  • 1 can diced green chiles Substitute with jalapeños for more heat.
  • 1 tablespoon chili powder Taco seasoning makes a great substitute.
  • 1 teaspoon ground cumin Omit if unavailable.
  • 1 teaspoon smoked paprika Regular paprika can be used.
  • 1/4 cup cilantro, chopped Omit if not a fan.
  • 1 cup shredded cheese Choose cheddar, colby jack, or spicy pepper jack.

Method
 

Cooking Instructions
  1. Heat the avocado oil in a large cast-iron skillet over medium-high heat until shimmering.
  2. Sauté the diced Yukon Gold potatoes for about 5-6 minutes until golden-brown and nearly tender.
  3. Add the ground beef, onion, and bell pepper to one side of the skillet; season with salt and pepper, cooking for 7-8 minutes.
  4. Stir in the diced green chiles, chili powder, ground cumin, and smoked paprika; cook for another 2 minutes.
  5. Continue to cook for an additional 6-8 minutes until potatoes are tender and beef is cooked through.
  6. Sprinkle cheese on top, cover, and let it melt for 1 minute.
  7. Garnish with cilantro if desired, then serve hot.
