  • 2 Tbsp Chili Powder Use a spice blend if out
  • 1 Tbsp Ground Cumin Coriander as a substitute
  • 2 Tbsp Sweet Smoked Paprika Regular paprika also works
  • 1 tsp Mustard Powder Optional but recommended
  • 1 Tbsp Dried Oregano Use double amount if fresh
  • 1 tsp Cayenne Pepper Adjust based on spice preference
  • 1 tsp Onion Powder Substitute with finely chopped onion
  • 1 tsp Garlic Powder Use fresh garlic instead if preferred
  • 1 tsp Kosher Salt Sea salt can be used
  • 1 tsp Ground Pepper Adjust to taste
Aromatics
  • 2 Tbsp Olive Oil Any cooking oil works
  • 1 large Yellow Onion Substitute with white onion if necessary
  • 2 stalks Celery Can substitute with bell peppers
  • 3 cloves Garlic Minced or fresh is preferred
Chili Ingredients
  • 4 cups Low Sodium Chicken Broth Vegetable broth for vegetarian option
  • 2 cups Great Northern Beans Pinto beans are a substitute
  • 14.5 oz Fire-Roasted Canned Tomatoes Regular canned tomatoes can be used
  • 1 can Diced Green Chiles Swap with bell peppers for milder option
  • 2 lbs Boneless Skinless Chicken Thighs Chicken breasts or rotisserie chicken can also be used
  • 8 oz Neufchâtel Cheese Regular cream cheese can be substituted or omitted
Toppings
  • 0.5 cup Cilantro Fresh for garnish
  • 2 pieces Lime Wedges For serving
  • 1 cup Cheese Shredded or cubed for serving
  • 2 cups Tortilla Chips For serving

Method
 

Preparation Steps
  1. Combine all chili base spices in a bowl and set aside.
  2. Sauté aromatics in olive oil, then add spices, cover, and microwave for 4 minutes.
  3. Blend rinsed Great Northern beans with chicken broth until smooth.
  4. Combine sautéed onion mixture, remaining beans, tomatoes, chiles, and chicken in slow cooker.
  5. Cover and cook on low for 6 to 8 hours.
  6. In the last 30 minutes, stir in Neufchâtel cheese.
  7. Once cooked, serve garnished with cilantro, lime, cheese, and tortilla chips.
