  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt

Method
 

Preparation Steps
  1. In a small bowl, combine warm water, active dry yeast, and granulated sugar. Let sit until frothy.
  2. In a large bowl, whisk flour and salt. Gradually add yeast mixture until a shaggy dough forms.
  3. Knead dough on a floured surface for 5-7 minutes until smooth and elastic.
  4. Shape dough into a ball, place in a greased bowl, cover, and let rise for about 1 hour or until doubled.
  5. Preheat oven to 450°F (230°C) and line baking sheets with parchment paper.
  6. Bring water to a boil and stir in baking soda.
  7. Punch down dough, divide into 8 pieces, and roll each into a rope. Wrap hot dog with cheese and dough.
  8. Boil each wrapped pretzel dog for 30 seconds on each side, then transfer to baking sheets.
  9. Brush with beaten egg and sprinkle with coarse salt.
  10. Bake for 12-15 minutes until golden brown. Cool slightly on a wire rack before serving.
