Preparation Steps
- In a small bowl, combine warm water, active dry yeast, and granulated sugar. Let sit until frothy.
- In a large bowl, whisk flour and salt. Gradually add yeast mixture until a shaggy dough forms.
- Knead dough on a floured surface for 5-7 minutes until smooth and elastic.
- Shape dough into a ball, place in a greased bowl, cover, and let rise for about 1 hour or until doubled.
- Preheat oven to 450°F (230°C) and line baking sheets with parchment paper.
- Bring water to a boil and stir in baking soda.
- Punch down dough, divide into 8 pieces, and roll each into a rope. Wrap hot dog with cheese and dough.
- Boil each wrapped pretzel dog for 30 seconds on each side, then transfer to baking sheets.
- Brush with beaten egg and sprinkle with coarse salt.
- Bake for 12-15 minutes until golden brown. Cool slightly on a wire rack before serving.
