Ingredients

For the Cookies
  • 2 cups all-purpose flour Substituting with whole wheat flour gives a nutty flavor but may alter texture.
  • 1 teaspoon baking soda Ensure it's fresh for best results, as no direct substitution exists.
  • 0.5 teaspoon salt Omit only if using salted butter.
  • 1 teaspoon cinnamon Try nutmeg for a different spice profile.
  • 0.5 cups unsalted butter Coconut oil can be used for a dairy-free version, though texture may differ.
  • 1 cups brown sugar Light brown sugar or granulated sugar can substitute for lighter flavor.
  • 0.5 cups pure maple syrup Agave syrup can be a lighter alternative, but it won't be as rich.
  • 1 large egg A flax egg (1 tbsp ground flaxseed mixed with 2.5 tbsp water) works for a vegan option.
  • 1 tablespoon vanilla extract Try almond extract for a unique twist.
For the Brown Butter Icing
  • 1 cups powdered sugar If unavailable, ground granulated sugar can work, although texture may differ.
  • 0.25 cups milk Almond milk can substitute for a dairy-free option.

Equipment

  • mixing bowls
  • Electric mixer
  • baking sheets
  • parchment paper
  • wire rack
  • Saucepan

Method

Preparation Steps
  1. In a medium bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of salt, and 1 teaspoon of ground cinnamon. Set aside.
  2. In a large mixing bowl, beat together ½ cup of softened unsalted butter and 1 cup of brown sugar for 2-3 minutes until light and fluffy.
  3. Gradually add in ½ cup of pure maple syrup and mix until well combined.
  4. Add 1 large egg and 1 tablespoon of vanilla extract, mixing until fully incorporated.
  5. Slowly sprinkle in the dry mixture, mixing on low until just combined.
  6. Cover the dough with plastic wrap and refrigerate for at least 1 hour.
  7. Preheat the oven to 350°F (175°C). Scoop tablespoon-sized balls of dough onto lined baking sheets, spacing them 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden and the centers remain soft.
  9. Cool the cookies for about 5 minutes on the baking sheet before transferring to a wire rack.
  10. In a saucepan, brown ¼ cup of unsalted butter over medium heat, stirring for 4-5 minutes.
  11. Whisk in 1 cup of powdered sugar and 2 tablespoons of maple syrup, adding milk to adjust the consistency as needed.
  12. Once cookies are cool, dip or drizzle the icing on top and let sit for 30 minutes before serving.
