- Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan with foil and cooking spray.
- Combine the crust ingredients in a mixing bowl until crumbly, then set aside ¾ cup for topping.
- Press the remaining crust mixture into the prepared pan and bake for 10 minutes or until lightly golden.
- In the same bowl, whisk the filling ingredients until smooth, then pour over the cooled crust.
- Sprinkle pineapple chunks over the filling and pour the filling mixture on top.
- Sprinkle the reserved crust mixture on top and bake for an additional 35 minutes until golden brown.
