Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine warm water, yeast, and sugar. Whisk until dissolved, then let sit for 5 minutes until frothy.
  2. Add melted butter and salt to the yeast mixture. Gradually mix in the all-purpose flour until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  4. Divide the dough into 6 sections, roll into ropes about 20 inches long, and cut into 1.5-2 inch pieces.
  5. In a large pot, bring water to a boil and stir in baking soda. Lower heat to simmer.
  6. Immerse pretzel bites in the baking soda bath for about 30 seconds using a slotted spoon.
  7. Preheat oven to 425°F. Sprinkle boiled bites with coarse salt or toppings of choice, and bake for 12-15 minutes.
  8. Remove from oven, let cool slightly, and brush with melted butter before serving.
