- Bring a large pot of salted water to a boil. Cook penne pasta for 8-10 minutes until al dente. Reserve ½ cup pasta water, drain the rest, and set aside.
- In a skillet, heat olive oil over medium-high heat. Cook sausage for 5-7 minutes until browned. Remove and set aside.
- In the same skillet, add onion and bell pepper. Sauté for 3-4 minutes until softened. Add minced garlic and cook for another minute.
- Add Cajun seasoning, paprika, thyme, and red pepper flakes. Stir and cook for 1-2 minutes.
- Pour in chicken broth, bring to a simmer, then stir in heavy cream and cook for 3-4 minutes.
- Return sausage to skillet, add pasta, and toss to combine. Adjust consistency with reserved pasta water as needed.
- Season with salt and pepper. Garnish with parsley and Parmesan cheese before serving.
