Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan by greasing and flouring it.
  2. In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. Rub the granulated sugar with lemon zest in a large mixing bowl to infuse the sugar with citrus aroma.
  4. Add the room temperature eggs, whole milk, vegetable oil, vanilla extract, and fresh lemon juice, mixing until smooth.
  5. Slowly add the dry ingredients to the wet mixture, folding gently until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 45-55 minutes until golden brown and a toothpick comes out clean.
  7. Prepare the lemon syrup by combining granulated sugar and fresh lemon juice in a saucepan and heating until dissolved.
  8. After baking, poke holes in the loaf and pour the syrup over it while still warm to soak in.
