Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch square baking dish.
  2. Chop the rhubarb and spread it evenly in the baking dish. Sprinkle with granulated sugar and lemon juice and let sit.
  3. In a bowl, mix flour, baking powder, and salt. Add milk, melted butter, and vanilla, and stir until smooth. Pour over rhubarb.
  4. Combine brown sugar and cornstarch in a separate bowl. Sprinkle over the batter, then pour boiling water on top without stirring.
  5. Bake for 40-45 minutes until top is golden brown and bubbly. Let cool for a few minutes before serving.
