In a large mixing bowl, combine the rolled oats, milk, Greek yogurt, honey or maple syrup, vanilla extract, and salt. Stir until well combined.
Gently fold in the sliced strawberries, reserving a few for topping.
Divide the mixture evenly into four jars or containers with lids.
Cover the jars and refrigerate overnight, or for at least 4 hours, to allow the oats to soak and soften.
When ready to serve, give the oats a good stir and top with the reserved strawberries. Enjoy cold or warm them in the microwave for about 30 seconds if desired.
