For the Peach Puree
  • 6-8 large ripe peaches Pitted and diced
  • 0.5 cup granulated sugar For peach puree
  • 0.5 cup water For peach puree
  • 1.5 cups fresh lemon juice From 8-10 lemons
For the Simple Syrup
  • 1 cup granulated sugar For simple syrup
  • 1 cup water For simple syrup
For the Lemonade
  • 4-6 cups cold water Adjust to taste

  • as desired ice cubes

Method
 

Step-by-Step Instructions
  1. Wash, pit, and dice the peaches. In a saucepan, combine peaches, sugar, water, and lemon juice. Heat for 10-15 minutes.
  2. Mash the mixture into a chunky puree and strain through a fine-mesh sieve. Allow to cool for 15 minutes.
  3. In a separate saucepan, combine sugar and water for the simple syrup. Heat until sugar dissolves, about 5 minutes.
  4. Juice the lemons until you have 1½ cups. Strain to remove seeds and pulp. Mix with the cooled simple syrup in a pitcher.
  5. Stir in the cooled peach puree and gradually add cold water to adjust sweetness to taste.
  6. Refrigerate for at least 30 minutes. Serve over ice, garnished with peach slices, lemon wheels, and mint sprigs.
