Method
 

Steps
  1. In a large bowl, combine warm water with yeast and sugar. Let it sit for 5-10 minutes until frothy.
  2. Add flour, salt, and olive oil to the mixture. Mix until incorporated, then knead for 8-10 minutes until soft and elastic.
  3. Shape the dough into a ball and place in a greased bowl. Cover with a damp cloth and let rise for about 1 hour until doubled in size.
  4. Melt butter in a saucepan. Add minced garlic and herbs, sautéing for 2-3 minutes until fragrant. Remove from heat and cool.
  5. Once the dough has risen, punch it down and roll it into a 12x18 inch rectangle. Spread the garlic herb butter over it.
  6. Sprinkle the cheeses over the dough evenly. Starting from one long side, roll the dough into a log.
  7. Slice the log down the middle lengthwise, twist the halves with cut sides facing up and place in a greased loaf pan.
  8. Cover the twisted loaf and let it rise for another 30 minutes. It should be puffy and expanded.
  9. Preheat the oven to 350°F (175°C). Bake the loaf for 30-35 minutes until golden brown and hollow-sounding when tapped.
  10. Let the bread cool slightly before slicing to enhance texture and flavor.
