Step-by-Step Instructions
  1. Pat chuck roast dry, season generously with salt and pepper.
  2. Heat skillet, add olive oil, and sear the roast for 2-3 minutes on each side.
  3. Layer sliced onion, carrot chunks, and quartered potatoes in the slow cooker.
  4. Sprinkle minced garlic and dried thyme over vegetables; add bay leaf.
  5. Place the seared roast on top of vegetables.
  6. In a bowl, whisk together beef broth and Worcestershire sauce. Pour around the roast.
  7. Cover and cook on LOW for 8 hours or HIGH for 4-5 hours.
  8. Remove bay leaf and let roast rest for 10 minutes before slicing.
