  • 1 piece Fresh ginger Grated
  • 3 cloves Garlic Minced
  • 1/4 cup Soy sauce Or tamari for gluten-free
  • 2 tablespoons Dark soy sauce Optional
  • 1 cup Coconut milk For creaminess
  • 2 tablespoons Brown sugar Light or dark
  • 2 tablespoons Fresh lime juice For brightness
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the Chicken Skewers
  • 1 pound Chicken (dark meat preferred) Cut into chunks
  • 8 pieces Skewers Soaked in water if wooden

Method
 

Preparation Steps
  1. In a large mixing bowl, combine ginger, garlic, soy sauce, dark soy sauce, coconut milk, brown sugar, lime juice, salt, and pepper. Whisk thoroughly for about 2 minutes until well blended and smooth.
  2. Add chicken chunks into the marinade, ensuring each piece is coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  3. After marinating, thread marinated chicken chunks onto soaked skewers, leaving space between pieces.
  4. Preheat the grill to medium-high heat, about 200°C (400°F), and lightly brush the grates with oil.
  5. Grill the skewers for 4-5 minutes on each side until golden brown and the internal temperature reaches 74°C (165°F).
  6. Remove from grill, squeeze fresh lime juice over the top, and serve immediately.
