Step-by-Step Instructions
  1. Place the chicken breasts or thighs into your crockpot, laying them flat.
  2. Chop sun-dried tomatoes and sprinkle over the chicken. Pour in coconut milk or heavy cream, then add Parmesan, garlic, oregano, smoked paprika, and season with salt and pepper.
  3. Gently stir until chicken is well-coated with the sauce.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fork-tender.
  5. Once done, shred the chicken if desired, or leave it whole.
  6. Stir in lemon juice and olive oil, and add fresh basil.
  7. Serve the chicken over your choice of base, garnished with additional basil.
