Ingredients
  

For the Meatballs
  • 1 pound Ground Turkey Keeps meatballs moist and flavorful
  • 1 cup Fresh Breadcrumbs Can be substituted with panko for a crunchier texture
  • 0.5 cup Milk Any type of milk works, including whole or almond
  • 1 small Onion (finely minced) Shallots can be used for a milder taste
  • 2 cloves Garlic (minced) Freshly minced garlic is recommended
  • 2 tablespoons Fresh Sage Dried sage can be used in a reduced amount
  • 2 teaspoons Italian Seasoning A mixture of dried herbs can serve as a great alternative
  • 1 large Egg Feel free to substitute with a flax egg
  • 0.5 cup Parmesan Cheese Nutritional yeast can replace it for a dairy-free alternative
For the Pumpkin Sauce
  • 1 cup Pumpkin Puree (canned or homemade) Make sure it’s pure pumpkin, not pie filling
  • 0.5 cup Heavy Cream You can use half-and-half for a lighter version
  • to taste Salt & Pepper Adjust to your personal taste

Method
 

Cooking Instructions
  1. In a large mixing bowl, soak fresh breadcrumbs in milk for about 5 minutes until softened. Then, gently mix in ground turkey, finely minced onion, minced garlic, fresh sage, Italian seasoning, egg, and Parmesan cheese.
  2. Shape the turkey mixture into uniform meatballs, roughly 1 to 1.5 inches in diameter. Allow them to rest for about 10 minutes.
  3. Heat a large skillet over medium heat and add a splash of olive oil. Once shimmering, add the meatballs, browning for about 6-8 minutes until golden brown on all sides.
  4. In the same skillet, add pumpkin puree and heavy cream to the remaining drippings. Stir gently, bring to a simmer for about 3-5 minutes, then add fresh sage, salt, and pepper to taste.
  5. Add the browned meatballs back into the skillet, gently stir to coat with sauce, and simmer for an additional 3-4 minutes until heated through.
