- In a large mixing bowl, soak fresh breadcrumbs in milk for about 5 minutes until softened. Then, gently mix in ground turkey, finely minced onion, minced garlic, fresh sage, Italian seasoning, egg, and Parmesan cheese.
- Shape the turkey mixture into uniform meatballs, roughly 1 to 1.5 inches in diameter. Allow them to rest for about 10 minutes.
- Heat a large skillet over medium heat and add a splash of olive oil. Once shimmering, add the meatballs, browning for about 6-8 minutes until golden brown on all sides.
- In the same skillet, add pumpkin puree and heavy cream to the remaining drippings. Stir gently, bring to a simmer for about 3-5 minutes, then add fresh sage, salt, and pepper to taste.
- Add the browned meatballs back into the skillet, gently stir to coat with sauce, and simmer for an additional 3-4 minutes until heated through.
