Preparation
- Preheat the oven to 400°F (200°C). Wash the potatoes and poke holes in them.
- Coat each potato with avocado oil and season with salt and black pepper.
- Bake the potatoes for 50-60 minutes until tender, then cool for 10 minutes.
- Slice each potato in half and scoop out the insides, mixing them with hot milk, butter, salt, and pepper.
- Fill the potato shells with the mashed potato mixture.
- Layer bacon and cheese into the empty wells of the potatoes.
- Crack an egg into each potato shell and season.
- Lower the oven to 375°F (190°C) and bake for an additional 15-20 minutes.
- Let the potatoes cool for a few minutes before serving.
