Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Wash the potatoes and poke holes in them.
  2. Coat each potato with avocado oil and season with salt and black pepper.
  3. Bake the potatoes for 50-60 minutes until tender, then cool for 10 minutes.
  4. Slice each potato in half and scoop out the insides, mixing them with hot milk, butter, salt, and pepper.
  5. Fill the potato shells with the mashed potato mixture.
  6. Layer bacon and cheese into the empty wells of the potatoes.
  7. Crack an egg into each potato shell and season.
  8. Lower the oven to 375°F (190°C) and bake for an additional 15-20 minutes.
  9. Let the potatoes cool for a few minutes before serving.
