Step-by-Step Instructions
  1. Prepare Thyme Syrup: Combine 1/2 cup sugar, 1/2 cup water, and 4 thyme sprigs in a saucepan. Simmer over medium heat for 5 minutes until dissolved.
  2. Juice Lemon: Cut one fresh lemon in half and squeeze into a bowl until you have about 1 ounce of juice, straining out seeds.
  3. Mix Ingredients: In a cocktail shaker, combine 2 tablespoons fig jam, 2 ounces gin, 1 ounce lemon juice, and 1 ounce thyme syrup. Shake with ice for 15 seconds.
  4. Strain & Serve: Fill glasses with ice and strain the punch mixture over the ice until fully poured.
  5. Garnish: Top each glass with 3 ounces of sparkling water and garnish with thyme and fig slice.
