- In a large mixing bowl, combine chopped crawfish or shrimp, diced andouille sausage, shredded cheddar cheese, diced bell pepper, diced red onion, and cooked rice. Season with Cajun seasoning and stir in chopped parsley for freshness.
- Lay an egg roll wrapper on a clean surface in a diamond shape, and spoon 2–3 tablespoons of the filling near the bottom corner. Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Use water to seal the edges.
- In a deep skillet or pot, heat vegetable oil to 350°F (175°C). When it shimmers, it's ready for frying.
- Add the egg rolls seam-side down into the hot oil, frying for 2–3 minutes per side until golden brown. Drain on paper towels.
- Serve the fried Voodoo Egg Rolls on a platter, offering various dipping sauces alongside.
