Method
 

Step-by-Step Instructions for Wood-Fired Calzones
  1. Preheat your wood-fired oven to 500–550°F (260–290°C) and stabilize for 30 minutes.
  2. Divide the pizza dough into 4 equal balls and let rest for 30 minutes under a kitchen towel.
  3. Roll each dough ball into an 8–9 inch circle on a floured surface.
  4. Mix ricotta, mozzarella, Parmesan, garlic, and Italian seasoning in a bowl until well combined.
  5. Spread 2-3 tablespoons of marinara sauce on half of each dough circle, then spoon filling on top.
  6. Fold the dough over to create a half-moon shape, crimping the edges to seal.
  7. Dust a pizza peel with flour and transfer calzones to peel. Bake for 6-8 minutes until golden brown.
  8. Remove from oven, brush with olive oil, cool slightly, and serve warm with marinara sauce.
