- Preheat your wood-fired oven to 500–550°F (260–290°C) and stabilize for 30 minutes.
- Divide the pizza dough into 4 equal balls and let rest for 30 minutes under a kitchen towel.
- Roll each dough ball into an 8–9 inch circle on a floured surface.
- Mix ricotta, mozzarella, Parmesan, garlic, and Italian seasoning in a bowl until well combined.
- Spread 2-3 tablespoons of marinara sauce on half of each dough circle, then spoon filling on top.
- Fold the dough over to create a half-moon shape, crimping the edges to seal.
- Dust a pizza peel with flour and transfer calzones to peel. Bake for 6-8 minutes until golden brown.
