Ingredients
  

For the Tortellini
  • 1 package fresh tortellini opt for cheese-filled
For the Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell peppers any color, diced
  • 0.5 medium red onion soaked in cold water
  • 1 cup fresh basil for garnish
For the Vinaigrette
  • 0.5 cup olive oil extra-virgin preferred
  • 0.25 cup balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • to taste salt
  • to taste pepper

Method
 

Cooking and Combining
  1. Bring a large pot of salted water to a boil. Add fresh tortellini and cook according to package instructions (3-5 minutes), until they float and are tender.
  2. Drain the tortellini and rinse under cold water to stop cooking. Set aside.
  3. Wash and chop the vegetables. Combine in a large mixing bowl.
  4. In a separate bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper until emulsified.
  5. Once cooled, combine tortellini with veggies and pour vinaigrette over. Toss gently to coat.
  6. Cover with plastic wrap and refrigerate for at least 10-15 minutes before serving.
  7. Garnish with fresh basil before serving.
