Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, crush the graham crackers finely and mix with melted butter until well combined. Press into the bottom of a 9x9" baking pan and bake for about 10 minutes until slightly golden.
- Zest and juice the key limes in a mixing bowl. Whisk together the sweetened condensed milk, vanilla extract, and sour cream. Add egg yolks and mix until smooth.
- Pour the lime mixture over the baked crust and bake for 15-18 minutes until the edges are firm and the center jiggles slightly.
- Once cooled, whip the heavy cream until stiff peaks form and spread over the cooled bars. Chill in the refrigerator for at least 2 hours before serving.
- Slice the bars into squares and enjoy.
