Ingredients
  

For the Crust
  • 1 cup Graham Crackers Use gluten-free if desired
  • 5 tbsp Butter Unsalted, melted
For the Filling
  • 3/4 cup Key Limes Juiced and zested
  • 1 can Sweetened Condensed Milk
  • 4 units Egg Yolks Substitute with 2 tbsp yogurt per yolk for non-egg version
  • 1/2 cup Sour Cream or Yogurt Interchangeable
  • 1 tsp Vanilla Extract Can be omitted
For the Topping
  • 1 cup Heavy Cream Whipped

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, crush the graham crackers finely and mix with melted butter until well combined. Press into the bottom of a 9x9" baking pan and bake for about 10 minutes until slightly golden.
  3. Zest and juice the key limes in a mixing bowl. Whisk together the sweetened condensed milk, vanilla extract, and sour cream. Add egg yolks and mix until smooth.
  4. Pour the lime mixture over the baked crust and bake for 15-18 minutes until the edges are firm and the center jiggles slightly.
  5. Once cooled, whip the heavy cream until stiff peaks form and spread over the cooled bars. Chill in the refrigerator for at least 2 hours before serving.
  6. Slice the bars into squares and enjoy.
