Ingredients
  

  • 1 pound ground turkey
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1 jar 24 ounces marinara sauce
  • 12 ounces rigatoni pasta
  • 4 cups fresh spinach
  • 2 tablespoons olive oil
  • Fresh basil leaves for garnish optional

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, ricotta cheese, Parmesan cheese, breadcrumbs, egg, minced garlic, oregano, salt, black pepper, and red pepper flakes. Mix until well combined.
  3. Form the mixture into meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.
  4. Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown.
  5. While the meatballs are baking, cook the rigatoni according to package instructions until al dente. Drain and set aside.
  6. In a large skillet, heat olive oil over medium heat. Add the fresh spinach and sauté for 2-3 minutes until wilted.
  7. Pour the marinara sauce into the skillet with the spinach and stir to combine. Add the cooked rigatoni and gently toss to coat.
  8. Once the meatballs are done, add them to the skillet and stir gently to combine everything.
  9. Serve hot, garnished with fresh basil leaves if desired.
